Although
high performance liquid chromatography (HPLC) is the method of
choice for separation and quantification of b-carotene (Barba et al.,
2006), but requires exhaustive sample purification steps for its
detection, and developed methods are complicated than UVeVis
spectrometric methods. Recently, there is a very limited report on the
determination of b-carotene in variety of vegetables and fortified
meat samples.
