Biogenic amines (BA) are considered undesirable metabolic
products which can be produced by starter microorganisms and
have potential health risks to consumers (Ammor and Mayo, 2007;
Holzapfel et al., 1995). Therefore, the amino acid decarboxylase
activity has to be screened when selecting LAB. Among the 23
lactobacilli strains only L. oris CTC1711 was a tyramine producer
(Table 3). Previous studies have shown that Lactobacillus brevis,
Lactobacillus buchneri and Lactobacillus curvatus were the most
intensive tyrosine decarboxylase lactobacilli species although
strains from other species also showed amine production (Bover-
Cid and Holzapfel, 1999).
