The initially observed high migration of BrTAGs close to the interface which declines with the distance from the interface (Fig. 6) can be supported by earlier studies (Smith et al., 2007).
Further, an interesting observation is the high concentration of BrTAGs in the shells, especially for samples stored at 23 _C. In the first 200 lmof the shell between 5% and 7% of BrTAGs is observed at week 6, which is even above the actual concentration in the filling (5% of the total fat content in the filling).
The fatmatrix is a multiphase system, although, in this context, we may consider it as a two phase system with a liquid phase and a solid phase.
We may assume that the solid phase is resident and that all migration occurs in the liquid phase.
