percentages of ginger powder are shown in Table 2. The TPC and RSA values of ginger powder were 9.43 0.86 mg GAE/g DW and 4.18 0.03 respectively. The former value was very similar to that one measured by Chan et al. (2008) on fresh ginger rhizome(assuming an average water content of about 12e18%). In relative terms, this value was higher than those generally found in cereals and vegetables (Kahkonen et al., 1999) and also in some alternative cereals such as amaranth, buckwheat and quinoa (Gorinstein et al.,2007), confirming that ginger is a good source of phenols.
