The increase of microbial populations in pomegranate juices under refrigeration conditions is shown in Table 2. Microbial counts in untreated cloudy and clarified pomegranate juices increased up to 6.65 log CFU/mL after 21 days storage at 5 °C. On the contrary, microbial growth in heat-treated juice was almost nil or negligible up to 120 days. No significant changes in pH were observed during storage, being pH values of all pasteurized samples between 3.3 and 3.6.
