Epidemiological studies of the Greenland Inuit Eskimos concluded
that the rarity of coronary heart disease in their culture may
be partly explained by the anti-thrombotic effect of u-3 fatty acids,
prevalent in diets rich in marine oils (Bang & Dyerberg, 1972).
Dietary recommendations suggest eating 200e300 g of fish per
week, providing 200e400 mg EPA/DHA per day (Kolanowski,
Swiderski, & Berger, 1999). Enrichment of commonly consumed
foods with u-3 fatty acids, is a rapidly growing functional food
product category, and a novel way to increase u-3 intake without
radical changes in eating patterns (Jacobsen, 2008).
