Colour changes of pineapple cubes during 16 days of storage were evaluated using a Minolta CR-300 chroma meter (Konica Minolta Sensing, Inc., Japan). The instrument was calibrated using a standard white plate. The L value (lightness), C (chroma) and h◦ (hue angle) were determined for coated and uncoated samples (Antoniolli et al., 2006).
