Pilsner beer showed a melanoidin content of 8.7%, which was double to that found by Kuntcheva and Obretenov (1996) but
in line with the results of Zhao, Li, Sun, Yang, and Zhao (2013) who reported a melanoidins content of 10.3%. Regarding balsamic vinegar, the amount of melanoidins was similar to those with lower storage time as described by Tagliazucchi et al. (2010b).
