Significantly higher total dietary fibre content was observed in germinated C. album flour cookies followed by raw C. album cookies and wheat flour cookies (Table 5).
Germination and baking has been reported to further improve the dietary fibre content of cookies.
Increase in total dietary fibre of cookies is not due to new synthesis, but rather to the formation of fibre-protein complexes that are resistant to heating and are quantified as dietary fibre
