2.2.2. Microwave blanching
Two hundred grams of A. bisporus slices was placed in Teflon sample
holders and heated in a 2450-MHz microwave oven equipped with a
turning table set at 800 W (full power; WP800SL23-2; Galanz Inc.,
Shunde, China). The temperature in the center of the A. bisporus slices
wasmeasured at different locations by using a fiber optic thermometer
(Model: Luxtron One, Transcat Inc., NY, USA).MWB was stopped when
the temperature at the center of the A. bisporus slices had been maintained
at 100 °C for 1 min. After blanching, the samples were cooled in
a stainless steel pan by using a fan until there was no visible water on
their surface. Five experiments were performed and samples were
taken from each experiment.
