In the case of the non-stationary drying the highest loss of betacarotene was observed for the irregular changes in drying air temperature. The of b-carotene is about (61–68)%, so the loss of this component is in the range of about (32–39)%. For the drying conditions with regular changes in the air temperature, the preserved b-carotene content is much higher and amounted to the retention of about (73–92)%, which means losses only of (8–27)%. This is a significantly lower loss than in the case of the irregular changes. In the case of stationary drying the b-carotene retention values are similar to those obtained in drying with longer cooling periods.
