The most remarkable mortality rate of probiotic bacteria occurred in the first hour when the viable count decreased by 2 log10 cfu g1, after this time the behaviour remained almost constant, until reaching 2 log10 cfu g1.
Our results suggested that the probiotic strains used have either an intrinsic resistance to pancreatic enzymes or the matrix of protein and fat in the cottage cheese provided some protection.
