starch is energy storage of plants. corn, potato , wheat and rice are important sources of starch . most starch contains 10-20% of amylose and 75-90% of amylopectin. complete hydrolysis of amylose and amylopectin gives solely D-glucose.
amylose is composed of linear chains of up to 4000 D-glucose monomers linked by 1,4-glycosidic bond.
