The pH of the control(0kGy)mango juices ranged between
3.88 and 4.52,with the lowest in Neelam and highest in Raspuri
cultivars,respectively(Table1). The pH was unaffected up to 1kGy
but at a higher dose of 3kGy a significant (Pr0.05) in crease in pH
was noted in all the cultivars,except Raspuri and Totapuri cultivars,
where the pH remained unaffected at all doses(Table1). Conflicting results have been reported on the effect of irradiation on pH in different fruit juices.
