2.9. DPPH radical-scavenging activity
The free radical scavenging activity of beverage model was
determined according to the DPPH method (Yamaguchi, Takamura,
Matoba, & Terao, 1998) with some modifications. A solution of beverage
(0.05 mL) was added to the test tube containing mixture of
0.95 mL ethanol and 3 mL of 100 lM DPPH solution in ethanol
(freshly prepared). After incubation for 15 min at room temperature,
the absorbance was immediately measured at 517 nm using
a UV–visible spectrophotometer. Results were expressed in term
of ascorbic acid equivalent antioxidant capacity, AEAC.
