Overall food cost until Sep 24 was 23.64%.
- Direct purchase 1-23 Sep was 5.3M whereas 1-23 Aug was 6.5M. Direct purchase mean food that delivered and invoiced to receiving. It won’t record as food cost at submitting and approving PR.
- BQ food cost was only 19.1% which I am curious on transfer that is not correct.
- Barsu food cost was at 19.5%, increase from Sep 21 report at 7% and again transfer in was too low in my opinion. Barsu direct purchase were only vegetable, some prawn and duck but beef for burger might have to transfer from butcher which I am not sure that they miss any items.
- Big concern for Rossini’s, food cost was only 20.1%, too far below outlook. Sep direct purchase (23 days) was not much difference from 23 days in Aug. Transfer out to other kitchen was almost 50% of their direct purchase. Is it correct?
- Fix food cost percentage are at IRD and Living Room.
- Orchid 28.6%, Basil 26.4% and Sala 22.6%, I think these 3 venues are ok.
- Transfer by dish are now from Infrasys report, no more manual transfer. So I think they are correct.
