The attributes of authenticity and indigenousness reflect the
local culture, background and history of a tourist destination. When
tourists can immerse themselves in or connect with the local lifestyle
in a symbolic way, they can more easily experience the
uniqueness of a tourist destination. Such a unique and distinctive
experience helps tourists to escape from their daily routines.
Therefore, a tourism food specialty with the attribute of authenticity
and indigenousness is a tourist attraction. However, when
considering two of the most popular souvenirs in Taiwan, tea leaves
and pineapple pies, we find that the increasing demand in the
tourist market resulted in a shortage of local tea leaves and pineapple
pie sources, leading to higher costs. To reduce costs, local tea
leaves and pineapple pie sources were replaced with imported
ingredients that were not from Taiwan. Tourists were not satisfied
with the lack of authenticity because they generally expect to
purchase products that are locally made. Thus, the certification and
labeling of local food material constitute one strategy for enhancing
and promoting food souvenirs in Taiwan.
