Delphinidin-3-glucoside was the compound showing the
greatest degradation during storage (almost 80%), whereas
pelargonidin-3-glucoside was the most stable (9% loss), with no
significant difference between 0 time and 6 months. Although no
evidence has been found for the presence of pelargonidin in
blueberries, the peak identified with the same retention time as
pelargonidin-3-glucoside was presented as such, since it is
believed that this compound may have co-eluted with another
of similar polarity.
