Mesophilic aerobic bacteria, as well as yeast and moulds counts,
were determined using the Mexican Standards approved methods
(Mexican Official Standards, 1994a; 1994b). Total soluble solids, pH,
and titratable acidity were measured employing AOAC 932.12,
AOAC 942.1.04 and AOAC 942.1.15 standards respectively (AOAC,
1998)
