The degradation of amylose and the change of amylopectin branchchain
length might be induced by intramolecular and intermolecular
hydrolysis and transglycosylation of glucosyls since TfMA possessed
dual activities as both a glycoside hydrolase and a glycosyltransferase
(Li et al., 2011; Li, Li, Yin, & Park, 2010).
