3.3. Total polyphenol content
The total polyphenol content in control and ginger oleoresin
samples obtained with enzyme treatment is presented in Table 2.
Extraction of ginger with ethanol resulted in higher extraction of
polyphenols (33 mg/g) compared to conventional acetone extraction
(31 mg/g). Pre-treatment of ginger with cellulase followed
by extraction with ethanol afforded the resin with maximum
amount of polyphenols (37.5 mg/g). Pre-treatment of ginger with
pectinase, amylase and viscozyme followed by extraction with ethanol
gave resins with polyphenols in the range of 33–34.2%. Higher
content of polyphenols in the resin could be an advantage because
of the health benefits of polyphenols.
