The concentration of a mix of 5 strains
of L.monocytogenes in hamcontaining EOs is presented in Fig. 1. Respective
growth rate of L. monocytogenes in control ham and hams containing
EOs of garlic, oregano, thym (red), and cinnamon cassia are 0.404,
0.396, 0.328, 0.396, and 0.362 ln CFU/g/day (Table 3).
