2.5.3. Combined acoustic-mechanical analysis of the bread crust
A penetration test was carried out to assess the mechanical and acoustic properties of the bread crust, using a TA-XT Plus Texture Analyzer (SMS-Stable Micro Systems, Surrey, UK), combined with an AED Acoustic Envelope Detector supplied by from the same manufacturer. Force and acoustic emission acquisitions of were made simultaneously using the Texture Exponent software (Stable Micro Systems), with a data rate of 500 points per second during a compression/penetration test
