This study aims to isolate the LAB of traditional dairy products
collected from Iran. A wide range of traditional dairy products, including curd, tarkhineh, shiraz, yogurt, and cheese, is produced in different parts of Iran, because of its diverse climate. Shiraz and tarkhineh are the local names of two traditional dairy products in the west of Iran. These fermented dairy products are consumed in the region or exported to European countries because of increasing demand
