2. Materials and methods
2.1. Raw materials
Co-products from canned and juice extraction of mango (Mangifera
indica L., cv. Tommy Atkins and Haden), pineapple (Annanas
comosus L., cv. MDII), guava (Psidium guajava L., cv. Red) and passion
fruit (Passiflora edulis L., cv. Flovicarpa) were used. These coproducts
were provided by fruit processing industries located in
Loja, Ecuador. Mango co-products were mainly peel and pulp;
pineapple co-products were mainly peel and heart while guava
and passion co-products were mainly peel, pulp and seeds.
