Surimi paste was subjected to a temperature sweep to monitor heat-induced gelation using a CVO rheometer (Malvern Instruments Ltd., Worcestershire, UK). Samples were applied between cone (4 and 40 mm diameter) and plate with a gap of 150 lm. Samples were covered by a trapper with moistened sponge to
avoid sample drying out during heating. Samples was subjected to temperature sweep (20–90 C) at a heating rate of 2 C/min, a fixed frequency of 0.1 Hz, and shear stress of 100 Pa found in the linear viscoelastic region through shear stress sweep.
