Reverse spherification is similar to spherification, the only difference is which compound is added into the liquid you are spherifying. In spherification a mixture with sodium alginate is added into a calcium lactate bath. In reverse spherification a mixture with calcium lactate is added to a sodium alginate bath. Reverse spherification is usually a more robust process as the resulting calcium alginate usually creates a thicker membrane. This technique produces a more stable sphere that does not need to be consumed immediately. It is also best used with high calcium or alcoholic liquids.
