Baking: Cooking food in an oven. E.g. bread, pastry, sponge, egg-based dessert and potato dishes. The oven must be preheated to the desired temp before the food are baked.
Baking au bain marie: cooking in a water bath. Containers of food are placed into a tray which is then filled to ¾ with near boiling water. This cooking method provides a regulated and gentle heat. E.g. Cream brulee, bread and butter pudding, baked custards.
