(V0M5), but not in day 15 MAP steaks (V5M10) compared with day 0
steaks. Vacuum steaks had a higher meat flavour at both days 5 and 15
compared with MAP steaks (5.8 vs. 5.5; P=0.03 and 5.7 vs. 5.3;
P=0.01; S.E.=0.14).
