Determination of Titratable Acidity: A clean burette was filled with 100 cm3 of Sodium hydroxide solution and level of NaOH solution adjusted to zero mark. 50 cm3 of ginger was pipette into a conical flask and two drops of phenolphthalein indicator was added. NaOH solution was titrated against the ginger sample, swirling the conical flask to mix the two solutions and titration was continued until the end point was reached. The volume of alkali- NaOH solution used to neutralize the acid in the ginger sample was recorded.
