The breed also affected the amount of α-actinin, troponin complex (TnT, TnC, TnI) and myosin light chains (MLC1, MLC2) with the highest values being found in Podolian meat samples. Moreover proteolysis products were affected by breed: in Podolian and Romagnola × Podolian meat the highest values for 49–46 kDa and 32–27 kDa polypeptides were found. The percentage of the 30 kDa band within the pool of fragments ascribed to 32–27 kDa proteolysis products was 70% and 50% in Podolian and crossbred and in Friesian, respectively (data not shown).
