2.2. Analytical determinations of furosine and carbohydrates
Determination of furosine in the special dairy preparations was
done by ion-pair RP-HPLC following the method of Rada-Mendoza
et al. (2005).The data are the mean values expressed as milligrams
of furosine per 100 g of protein.
Carbohydrate analysis was carried out by GC-FID according to
the method of Ruiz-Matute et al. (2012).
