Recent studies have shown that the gel from soaking chia in water can replace guar gum and other thickeners.
- soak chia
- separate gel from seed with decanter
- dry gel and chia seed
- the powder from gel SHOULD work as thickener
- dry the seed
- extract oil
- left over cake is sold as flour.
The thickener should command a fantastic price if it works.
