For the Irish Cobbler (Fig. 7), the AA content of VI-cooked potatoes
decreased by 33%. However, VI-cooked potatoes had eight
times higher (p < 0.05) AA contents than had un-VI-cooked potatoes.
Moreover, VI-cooked potatoes of 100 g had a 100 mg AA content,
which is over twice the FAO value (45 mg/day)
