MATERIALSANDMETHODS
STUDY DESIGN,SETTING,PARTICIPANTS,ANDPROCEDURE
Participantswererandomlyselectedfrompeopleregisteredfor
a healthcheckwiththeChangshuCentreforDiseaseControl
and Prevention(CDC)in2012.Thestudypopulationconsisted
ofChineseolderpeopleaged45–80yearsinChangshu,Jiangsu
Province.ChangshuissituatedinSouthernChina.Changshuhas
a grossdomesticproduct(GDP)ofover4.80trillionyuan(US$759
billion),placingitsecondhighestinarankingofallChinese
provincesandmunicipalcities(34). ChangshuinJiangsuProvince
was selectedasthestudysitebecauseofitsrepresentationofsmall
tomediumsizecitieswheremostChinesepeoplereside.Italso
has welldevelopedeconomicstatusinChina,whichhasresulted
in dramaticchangesinthelifestyle,dietary,anddiseasepatternsof
its residentsinrecentyears.Chronic,non-communicablediseases
nowaccountforanestimated80%oftotaldeathsand70%of
disability-adjustedlife-yearslostinJiangsuprovince(35), making
it exemplarsofthischange.Tobeincludedinthestudyparticipants
hadtobeaged50orolder,andlivewithin50kmofametropol-
itan area.Peoplewhocouldnotprovidewrittenconsenttothe
study,hadneurologicalimpairments,severementalillness,stroke,
orheartfailurewereexcludedfromthestudy.Ofthe750eligi-
bleparticipants,550(73.3%)gavewritten,informedconsentfor
involvementinthestudy.Thiswassufficienttomeetthemini-
mumsamplesizerequirementof143participants.Participants
completedboththeFoodFrequencyQuestionnaire(FFQ)and
biomarkertests,whichweretakenbyqualifiedphysicians.
DIET-ANDACTIVITY-RELATEDQUESTIONNAIRE
TheFFQwasdevelopedaspartofthisstudy.The24-hdietaryrecall
methodwasusedtocollectfoodintakeovertwoweekdaysandone
weekendon.Pictureswerepresentedof50commonfoodsinChi-
nese dishes/utensilsinarangeofsizes;theparticipantswereasked
toindicateportion/sizesconsumedandhowoftentheyconsumed
the food(daily,weekly,ormonthly).Fromthisdata,34frequently
consumeditems(90%ofparticipantshavechosen)wereselected
and groupedasfollows:rice,flour,grains,beans,soybeans,soybean
products,nutsincludingpeanutsandsunflowerseeds,deep-color
vegetables,light-colorvegetables,ediblefungiandalgae(such
as mushrooms,agaric,andkelp),fruit,pork,poultry,seafood,
beef/lamb/otherredmeat,organmeat,processedmeat(suchas
ham, luncheonmeat,cannedmeat),eggs,milkandyogurt,milk
powderandcheese,confectionery,fastfood,sugar,puffedfood,
and pastries.Theamountofconsumptionofeachfooditemwas
calculatedindividuallyperdayperperson.
Exploratoryfactoranalysisextractedfourdietarypatterns
fromthe34-items.Thesepatternsarebestdescribedas:(1)a
“traditionalfoodpattern”consistingofpork,poultry,fishand
prawns,eggs,fruit,dark-colorvegetables,light-colorvegetables,
rice,water,yogurt,fungi,peanuts,andsunflowerseeds,pastries;
(2) a“processedandfastfoodpattern,”highinfatsandsugars,
consistingofmeatsnacks,puffedfood,fastfood,confectionery,
carbonateddrinks,andfruitandvegetableproducts;(3)a“soy-
bean,grains,andflourfoodpattern”consistingofbeans,grains,
potatoes,soybeans,flours,andsoybeanproducts;and(4)a“milk
products,otheranimalmeatsandanimalorganspattern”consist-
ing ofanimalliver,animalblood,otheranimalmeats,commercial
fruitandvegetablejuices,cheese,fruitjuices,freshmilk,andmilk
drinks.Thesepatternsexplained17.48,9.52,5.57,and4.80%of
the variance,respectively,comprising37.37%ofthetotalvari-
ance.Theitemmilkpowderhadlowfactorloading.Thisitemwas
deletedfromthe34-itemFFQ.Cronbach’salphacoefficientsof
0.76 indicatedareasonablelevelofinter-itemreliabilityforthe
questionnaire(0.69forthetraditionalfoodpattern;0.65forthe
processedandfastfoodpattern;0.73forthesoybeans,grains,and
flour foodpattern,and0.63forthemilkproducts,animalliver,
and otheranimalmeatpattern,respectively).Pearson’scorrela-
tioncoefficientsbetweenthescoresofthefourpatternsranged
from0.13to0.27,suggestingthatthesefourfoodpatternsare
discreteandthereforeindependentofeachother.
