it is evident that cur@star 3 wt% presented
higher DPPH radical scavenging ability which was followed by 2 wt
%, 5 wt% and 1 wt%. However, cur@star 5 wt% was not fully dissolved
at the concentration of 10 mg/mL and that may be the reason
that lower DPPH scavenging ability than expected was exhibited. In
the ABTS scavenging result (Fig. 8b), cur@star 3 wt% and 2 wt%
showed similar radical scavenging ability followed by 1 wt% and
5 wt%. Relatively lower radical scavenging abilitywas revealed than
that of DPPH assay which may be attributed by the experiment
procedure. In the ABTS, absorption was measured 1 min after
mixing sample and ABTS solution. Curcumin may not fully released
from the matrix of cur@star as suggested in the release test (see
