Our equipment are always broken. Please take good care of our equipment. Treat them as your own, know how to operate them properly and maintain it well so they last longer. The same goes with our food cost. We have high food cost because we just do not care. For example, our staff canteen - we throw a lot of food due to over production or staff taking too much food more than what they can eat.
GM encouraged all to help the environment and share own comments on how to improve the staff canteen. If you are a Cook, you can address to your supervisor if you see that too much food supply is being purchased. Food cost in the staff canteen is more than 20%. We can lower food cost by adjusting the menu to a better quality and healthy type of food, like serving more vegetable dish and less meat dish. Look at the equipment and utensils, are they clean and in good condition?
