Fresh fruits and vegetables such as banana and broccoli are
highly perishable due to physical, physiological, or pathological
factors that may occur before or after harvest. In commercial fruit
markets, the rate of ripening is controlled artificially, thus enabling
transportation and distribution to be carefully planned. Respiration
is a continuing process in a plant and cannot be stopped without
damage to the growing plant or harvested products, which
employs stored starch or sugar until the exhaustion of them, the
stop of respiration leads to ageing (Amthor, 1989)
