The DPPH free radical
method has been used extensively to evaluate reducing substances,
based on the reduction of methanolic DPPH solution in the presence
of a proton-donating substance, resulting in the formation of
diamagnetic molecules. The data showed that the stabilized RBO
with hot air, roasting, steaming and microwave had DPPH scavenging
effect and inhibition on linoleic acid peroxidation than that
of unstabilized rice bran (P < 0.05).
