Waiting Room. The waiting room should be located away from the booth area to prevent waiting panelists from distracting those in the booth area. The waiting room will be used for social interaction, payment of incentives, or other activities that need to take place prior to the test. It must be comfortable and have adequate lighting. Light reading material such as magazines may be placed in the room for panelists to use. The waiting room is sometimes used as the orientation or the briefing room. Food Preparation Areas. These will be designed on the basis of products to be evaluated. There are standard pieces of equipment that should go in every kitchen. Ample cabinet, refrigerated and frozen storage should be designed Environmental Control Odor The test areas must be as free from odors as possible. A slight positive pressure in the evaluation areas will reduce the migration of odors from the food prepara- tion and other areas. Air from the sample preparation areas should be vented through to the outside of the building. Air entering the evaluation room should preferably pass through activated charcoal filters. All materials and equipment in the room should be odor-free or have a low odor level
