-Carrageenan is a linear sulphated galactosaemia polysaccharide
built from repeated carrabiose units which consist of
alternating bound (1,3)- and (1,4)-d-galactopyranose links. In
the -carrageenan macromolecule, one carrabiose unit corresponds
one group of sulphuric acid ester of the R–OSO3Me type
[40]. Cations Na+, K+, Mg2+, Ca2+ can be as Me. -Carrageenan solutions
(at C > 1%, w/w), which are able to form thermotropic gels in
cooling when К+ (Rb+ or Cs+) ions are present [41].
