L. plantarum VL103(pMH) and derivatives generate additional
fermentation by-products, including acetoin, ethanol, and formate.
Acetoin production by the enzyme overexpressing strains was
lower than that by L. plantarum VL103(pMH) after 48 h of fermentation.
The LDH-deficient strain of L. plantarum exhibited a reduced
rate of NADH reoxidation, causing intracellular pyruvate accumulation
