growth rate of these fungi on a sponge cake analogue depended on
aw and temperature. The minimum aw values for growth of Penicillium
spp. were between 0.85 and 0.90, whereas A. flavus was able
to grow at an aw value of 0.90 and a temperature above 15 C
(Abellana et al., 2001). Meanwhile, optimum growth of Eurotium
spp. was at an aw value of 0.90 and a temperature of 30 C (Abellana
