Rice is a staple food in many parts of the world
especially in the East, South and South East Asia,
making it the second-most consumed cereal grain.
Although rice is a good source of protein, it is not a
complete protein. Though in smaller amounts, it contains
all of the essential amino acids required for a good
health. Bahadur (2003) reported that it is better to eat
unpolished (brown) rice, because the outer bran layer of
the rice grain, which is removed during the milling
process, is rich in fiber, iron, vitamins and minerals.
Further, the germination of brown rice (thereby making
GBR) is necessary for enhancing nutrients required for a
good health. The change of staple food from polished rice
to GBR can maintain and promote the healthy life and
improve the quality of life (Hiroshi 2005).
