3.5. Color analysis
Color differences measured by lightness L* and red color a* between coated and uncoated peppers and apples were determined during storage. Table 3 shows different color coordinates for coated and uncoated peppers samples. Pepper coating with pullulan coating caused a significant brightening (p < 0.05) of the material surface, which is explained by the fact that the layer of the material surface is glossy and shiny.
