Extraction of red cabbage was carried out in the presence of HCl/MeOH, the UV–vis spectrum of the extract showed three absorption bands at λmax 280, 330 and 535 nm corresponding to flavonoid and phenolic compound of anthocyanin. These results were agreed with Shinoda’s test. Bathochromic shift was obtained after adding AlCl3 into the solution ( Table 1 and Table 2), indicating ortho-dihydroxyl group in the molecule of anthocyanin. It can be concluded from the results that the anthocyanin in red cabbage obtained from extraction is cyanidin.
