Brown rice grains were washed and steeped in distilled water
(150 g in 1000 ml) for 24 h at 30 C. After soaking, the rice grains
were germinated by incubating at 30 C for 48 h. Distilled water
was sprayed to the grains for 15 min every 4 h to provide moisture
until they began to bud. For the heat-moisture treatment, the GBR
grains were transferred into a glass container and dried in a convection
oven (40 C) until the moisture content of the samples
reached 17 g/100 g. The container was sealed and then heated at
100 C for 4 h. The treated samples were subsequently dried in a
convection oven at 40 C overnight.
