The microbiological quality and safety of unripe grape products
were analyzed by determining the initial microflora. For this purpose, enumeration analyses of total mesophilic aerobic bacteria,total psychrophilic aerobic bacteria , yeasts and molds ,lactic acid bacteria, Bacillus cereus, Clostridium perfringens,Staphylococcus aureus, total coliform bacteria and
total fecal coliform bacteria were performed. In addition, the samples were also tested for the presence
of Escherichia col,Escherichia coli O157:H7 Salmonella spp.and Listeria monocytogenes
