It is important to mention that PME catalyzes the demethoxylation of pectin, rendering a demethoxylated polymer able to cross-link with divalent ions. Since this structure can either form gels (firming effect) or be a substrate for PG depolymerization (softening effect), the increase in cohesiveness could be the result of the combined effect of the increased activity of PME and the inhibition of PG (Jolie et al., 2012 and Sila et al., 2008).
