The relative activity of PPO and POD observed after
applying TH72 and when processing the juice by heat
exchanger was higher than in samples processed by TPEF,
TUV+PEF or TPEF+UV. However, TH94 reduced the relative
enzymatic activity to an almost negligible level for both
POD and PPO (0.9% and 0.44%, respectively). Relative to
fresh juice, PPO and POD were unaffected by TUV, but were
significantly decreased (P < 0.05) by TPEF. Juices processed
by TPEF, TUV+PEF or TPEF+UV did not show any significant
difference (P P 0.05) in relative PPO and POD activities
